Roasted Kale

“Roasted what?” you ask. That’s right, I said Kale. It’s a leafy green vegetable that I hadn’t really ever heard of until we joined a CSA this summer. We get a lovely box of vegetables every week that someone else grows fresh in their garden. I love fresh vegetables but I’m not much of a gardener so it works out quite well. But one week, we didn’t know what one bundle was and in our newsletter they told us that it was kale and they suggested a “Roasted Kale” recipe. Basically it’s a spinach-ish veggie that you can use in place of spinach in most recipes but you can also toss it with some olive oil and roast it. When you take it out of the oven you crack some sea salt over it and it tastes like potato chips. Our kids absolutely love it and ask for that as a treat. I KNOW!!! How often do kids ask for a vegetable as a treat?!?!

    OOOOhhhh, I’m going to have to try that. Sounds interesting…and I can use the sea salt from > U-Bake.
